I'm alive!!



Happy Fall!!!

I haven't had ANY time to blog because this semester is killing me!


I have plenty of new recipe's to share with you soon!
After this semester is over I'm ready for a VACATION!!

If you haven't been to a Christmas Market in Europe I suggest you put it on your bucket list!!
This year we will be going to Stuttgart, Germany


It looks absolutely breathtaking!

Can't wait until December!

Sour Cream Noodle Bake




This recipe is officially the new "fav" for dinner.
I love going to other blogs and browsing for recipe's. 
I've never claimed to be a good cook but I CAN follow instructions :) 
This recipe is from one of my favorite blogs See Jane in the Kitchen


Sour Cream Noodle Bake
Ingredients:

package of egg noodles
1 lb. ground beef
1/2 tsp. salt
fresh ground pepper
2 garlic cloves
2 small cans of tomato sauce
1/2 cup sour cream
1 1/4 cup cottage cheese
1/2 green onions, sliced
1 small bag frozen corn
1 cup shredded cheese

Directions:

Brown ground beef in skillet with garlic cloves. Drain fat and add tomato sauce, salt and pepper and allow to simmer while you prepare the rest. Cook egg noodles al dente. Drain pasta and toss with cottage cheese, sour cream, fresh ground pepper and green onions.

Add half the noodle mixture to baking dish, top with half the ground beef, top with cheese then frozen corn. Finish with the remainder of the noodles, ground beef and top with more cheese.
Bake at 350 for about 20 minutes until cheese is melted.

I Love Summer

Apple Crisp



Apple's are healthy, right?

This a quick and simple dessert recipe. I had two apples and didn't want them to go bad so I looked up this recipe from The Neely's. I already had all the ingredients in my pantry so I went for it!

Apple Crisp
Ingredients:

Filling:
5 Granny Smith Apples, peeled, cored, chopped small
1/4 cup finely shopped pecans
3 tablespoons all-purpose flour
1/2 cup brown sugar
2 tablespoons maple syrup
1 tablespoon lemon juice

Topping:
3/4 cup all purpose flour
1/3 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons chilled butter, cut into pieces
1/4 cup coarsely chopped pecans

Directions:
Preheat oven to 350 degrees F.
For the Filling:
Mix all the ingredients together. Place into 7 to 8 ounce ramekins.

For the topping:
Mix the flour, brown sugar, cinnamon and salt in a large bowl. Blend the butter into the mixture until it forms pea size lumps. Stir in pecans and sprinkle over filling.

Bake crisps for 35 to 40 minutes. Cool 10 minutes before serving.

Dad's Baja Shrimp Taco's





My dad is an amazing cook. 
 I had to wake up at 7:00 to go to a volleyball tournament almost every weekend when I was a kid.
The only thing to look forward to that early in the morning was my dad's breakfast. 
He used to put the most random stuff together and it would turn out amazing? 
One of my favorite foods he would make were pancakes. 
He would put oatmeal and one bag of sweet n low in the batter. Weird, right?
Simply Amazing and Delicious! 
I was visiting him for lunch last week and he shared his new shrimp taco recipe with me!

...Of course I forgot my camera, My iphone did the best he could :(


Dad's Baja Shrimp Taco's

1 lb. shrimp (cleaned and deveined)
6 tbsp. butter
3 tsp. red pepper flakes (you can add more if you want more spice:)
2 cloves garlic (minced)
1 cup chopped cabbage
1 cup chopped tomato
1/2 cup chopped cilantro
2 tbsp. mayo (add as needed)
5 tortillas

Add shrimp to a bowl of water and let them sit for 5 minutes.  Melt butter in medium saucepan on low heat and add garlic and red pepper. Chop cabbage, tomatoes, and cilantro and put in a medium size bowl. Add shrimp to the pan and cook for about 10 minutes. Warm tortillas and add mayo to vegetables in medium bowl. Place cooked shrimp in tortilla and add topping.

Cheddar and Herb Biscuits





When I was kid I used to love going to red lobster for their cheddar biscuits. 
Back then I could eat as many as I wanted and wouldn't have to worry about it. 
A few games of volleyball would have worked those biscuits off:)
The recipe I used is from Down Home with the Neelys
It's so cute to watch them cook together in the kitchen. It's one of my top 3 favorite shows!

Gina's Cheddar and Herb Biscuits

Ingredients:

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon cayenne pepper
2 tablespoon freshly chopped chives
1 tablespoon freshly chopped parsley leaves
3/4 cup grated sharp yellow cheddar
1 cup buttermilk
4 tablespoons butter, melted

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large bowl, mix flour, baking powder, salt, sugar, and cayenne together using a whisk. Add the herbs, cheese and buttermilk. Stir together until dough forms. Once dough has formed, using an ice cream scooper, scoop out dough onto baking tray. With a brush, lightly butter tops. Bake for 15 minutes.

Ruth's Chris Sweet Potato Casserole




Who doesn't love Ruth's Chris Steakhouse??
We had dinner there a few months ago for Uncle Pat's birthday. 
Whenever we go 2 orders of au gratin potatoes will be ordered. It's NOT an option.
We decided to try something else on the menu this time. 
I'm not a HUGE sweet potato fan on Thanksgiving but my mom convinced me to share an order with her and try them out.
Ruth's Chris sweet potatoes are more like a dessert. 
The perfect amount of sweetness in a bowl:)
The recipe is from Mrs. Jami.


Ruth's Chris Sweet Potato Casserole

Ingredients:

Crust
1 cup brown sugar
1/3 cup of flour
1 cup chopped pecans
1/4 cup butter (melted)

Sweet Potato Mixture

3 cups mashed sweet potatoes (you can use can to save time, drain)
1 cup of sugar
1/2 teaspoon of salt
1 teaspoon vanilla
2 eggs (well beaten)
1/2 cup of butter (melted)

Combine brown sugar, nuts and butter in a mixing bowl. Set aside
Preheat oven to 350 degrees
Combine sweet potato, salt, sugar, vanilla, eggs and butter in the order listed. Mix thoroughly.
Pour mixture into buttered baking dish.
Sprinkle the surface of the sweet potato mixture evenly with the crust mixture.
Bake for 30 minutes. Allow to set for about 30 minutes before serving.


I'm definitely making this for Thanksgiving this year:)

Bacon Wrapped Jalapeno Poppers





We went to the OC swap meet a few weeks ago and I grabbed a few bags of jalepeno's..
My grandpa likes to tease me into biting into one whenever we have them around. I only fell for it once. He convinced me it "wasn't that hot"...  He thinks he is SOOO funny!
Now he tries to trick my boyfriend.
As you know I have a deep connection with bacon and anytime I can put it in a recipe I will!
These jalepeno poppers were easy appetizers and a lot of fun making.



Whoever tells you to use half a slice of bacon is NOT your friend.
I repeat, NOT your friend.


Bacon Wrapped Jalepeno Poppers

Ingerdients:

25 fresh jalepenos
14-16 ounces of cream cheese
2 cups shredded cheddar cheese
2 (16 ounce packages) of bacon

Cut stems of the peppers and cut them long way. Remove seeds from peppers
fill each pepper with cream cheese and sprinkle cheddar cheese on top
Wrap a piece of bacon around each pepper half.  
Place on baking sheet in a 450 degree oven for 10 15 minutes or until bacon is cooked
Remove and serve when cooled.

Easy King Ranch Chicken





I'm always looking for easy casserole's to make at home.
I LOVE watching the food network channel and printing recipe's but some of them are just too time consuming.
Ever seen the show Jaime at home on the food channel? 
Weirdest show EVER.
He can cook a steak on a rock and run to his backyard and pick some wild mushrooms?
Who does that? I obviously can't relate. I barely have room to move in my kitchen yet alone have an entire garden in my back yard.
ANYWAYS...

This recipe is from Pennies on a Platter.

Easy King Ranch Chicken

6-8 servings

4 skinless, boneless chicken breasts, cooked and shredded or cubed
1 can cream of mushroom
1 can cream of chicken
1 can (10 oz) Rotel (diced tomatoes with green chiles)
1 can whole kernel corn, well drained
1 cup crushed Doritos, cheese flavored
2 cups shredded Mexican blend cheese

Preheat oven to 350 F. Spray 9" x 13" baking dish with nonstick cooking spray.

In a large bowl, mix together chicken, soups, Rotel and corn. Pour mixture into baking dish and top with cheese. Bake, uncovered, for 20 minutes.

After 20 minutes, take the casserole out of the oven and layer with the crushed Doritos. Bake an additional 10-15 minutes, until the chips are toasted. Let set 5 minutes before serving.



 This is a perfect kids dinner if your in a rush.. Who doesn't love Doritos?


Pretty simple, right?
